Cozy Vegan Chili (That Everyone Will Love)

Vegan Chili for Meal Prep

When the weather cools down or you just want something hearty that doesn’t take all day, this vegan chili is one of my go-to meals. It’s simple, packed with flavor, and makes plenty for leftovers (because honestly, chili always tastes even better the next day).

If you’re not vegan, you can easily swap the Textured Vegetable Protein (TVP) for any protein source you like — ground turkey, chicken, or beef all work great.

Ingredients

  • 1 tablespoon olive oil

  • 1 medium yellow onion, diced

  • 2 garlic cloves, minced

  • 1.5 cups Textured Vegetable Protein (TVP)

  • 1 taco seasoning pack (I love the Siete brand)

  • 4 tablespoons chili powder (add more if you like extra heat)

  • 2 tablespoons ground cumin

  • 1 tablespoon garlic powder

  • 1½ teaspoons salt

  • ½ teaspoon black pepper

  • ¼ teaspoon cayenne pepper

  • 1½ cups water or vegetable broth

  • 2 cans (15 oz.) petite diced tomatoes

  • 1 can (16 oz.) red kidney beans, drained and rinsed

  • 1 can great northern (white) beans, drained and rinsed

  • 1 can (8 oz.) tomato sauce

Optional bean swap: You can mix in black or pinto beans if you prefer.

Instructions

  1. In a large pot, heat olive oil over medium heat.

  2. Add diced onion and cook until softened and slightly golden.

  3. Add minced garlic and cook for about 1 minute, stirring often so it doesn’t burn.

  4. Stir in all remaining ingredients. Bring the chili to a boil, then reduce the heat and let it simmer for 20–30 minutes, stirring occasionally.

  5. Taste and adjust seasonings as needed, more chili powder for spice or a little salt if your broth is low-sodium.

Servings and Cost Breakdown

This recipe makes about 6 hearty bowls of chili or up to 8 smaller portions if you’re meal prepping.

The total cost for all ingredients comes out to roughly $10 to $11, which means you’re eating for about $1.30 to $1.80 per serving.

Even if you add your favorite toppings, avocado, cheese, or Fritos, it still stays under $2.50 a serving for a full, high-protein meal that’s easy on your budget.

This chili is filling, high-protein, and perfect for meal prep. I usually make a big batch on Sunday so lunch is already done for a few days.
